- Prepare your grill or grill pan over medium-high heat. While it heats, pat the shrimp dry with paper towels — this helps them sear rather than steam. In a small bowl, toss the shrimp with 1 tablespoon of olive oil, the smoked paprika, cumin, and a generous pinch of salt and pepper. You'll notice the spices coating each prawn in a fragrant, reddish-brown layer.
- Place the corn ears directly on the grill grates. Let them cook for 8–10 minutes, turning every 2–3 minutes with tongs. Listen for a gentle sizzle and watch the kernels transform from pale yellow to a deep, charred gold with blackened spots. The smell will become intensely sweet and smoky. Once done, remove the corn and set aside until cool enough to handle.
- While the corn rests, grill the shrimp. Place them on the grill in a single layer — you should hear a satisfying hiss as they hit the hot surface. Cook for 2–3 minutes per side. The shrimp will turn from translucent grey to opaque pinkish-white, and the edges will curl slightly. When they feel firm to the touch and have visible char marks, they're ready. Transfer to a plate.
- Make the lime vinaigrette by whisking together the remaining olive oil, lime juice, lime zest, and minced garlic in a small bowl. Add a pinch of salt and pepper. Taste it — the dressing should be bright and tangy, with the garlic adding a gentle warmth. Set aside.
- Once the corn is cool enough to handle, stand each ear upright on a cutting board and slice the kernels off using a sharp knife. You'll see the kernels release easily, and the sweet, roasted aroma will fill your kitchen. Collect them in a large mixing bowl.
- Add the diced red bell pepper, red onion, avocado, and cherry tomatoes to the bowl with the corn. Toss gently with a spatula — the colours should look vibrant and fresh against the charred corn. Add the grilled shrimp on top.
- Pour the lime vinaigrette over the salad and toss once more, being careful not to break up the avocado pieces. Sprinkle with fresh coriander and serve immediately. The salad should look glossy and inviting, with every ingredient coated in the bright dressing.
