Ingredients
  

  • 2 tablespoons olive oil
  • 1 large onion finely chopped
  • 3 garlic cloves minced
  • 3 carrots peeled and diced
  • 2 celery sticks diced
  • 1 large sweet potato about 300g, peeled and cubed
  • 200 g brown or green lentils rinsed
  • 1 tin 400g chopped tomatoes
  • 1 litre hot vegetable stock
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • 2 bay leaves
  • Salt and freshly ground black pepper to taste
  • A handful of fresh spinach or kale optional, for a colour boost at the end

Method
 

  1. Prep your vegetables: Start by chopping your onion, carrots, celery, and sweet potato into roughly 2cm chunks. There’s no need to be precious about it—uniformity is less important here than the fact that you’re saving time. You should see a colourful pile of orange, green, and purple hues on your chopping board.
  2. Layer the ingredients in the crockpot: Add the chopped onion, garlic, carrots, celery, and sweet potato to the slow cooker. Pour in the rinsed lentils—listen for the soft clatter as they hit the bottom of the pot. Then, tip in the tinned tomatoes, ensuring you scrape every last bit of juice out of the tin.
  3. Season and add liquid: Sprinkle over the smoked paprika, dried thyme, and a generous pinch of salt and black pepper. Tuck the bay leaves into the centre of the mixture. Pour the hot vegetable stock over everything, giving it a gentle stir with a wooden spoon until the spices swirl and dissolve into the liquid. The broth should look deeply coloured and smell wonderfully aromatic.
  4. Set and forget: Place the lid securely on your slow cooker. Set it to low for 6 hours or high for 3 hours. You’ll notice a faint, earthy, almost nutty fragrance starting to drift from the pot after the first hour—that’s the lentils and sweet potato beginning to soften.
  5. Check for doneness: After the cooking time has elapsed, carefully remove the lid. Steam will billow out, so stand back. The lentils should be tender but not mushy, and the sweet potato should yield easily when pressed with a fork. The broth will have thickened slightly and taken on a rich, rusty brown colour from the smoked paprika and tomatoes.
  6. Finish with greens (optional): If you’re using spinach or kale, stir it through the hot stew now. You’ll see the vibrant green leaves wilt almost instantly in the residual heat, adding a fresh pop of colour to the deep, earthy stew.
  7. Rest and serve: Remove the bay leaves. Let the stew sit for 5 minutes before ladling it into bowls. This brief rest allows the flavours to settle and meld together, giving you a richer, more cohesive taste.

Notes

For a thicker stew, remove the lid for the last 30 minutes of cooking. Greens like spinach or kale are optional but add a fresh color and nutrients. Leftovers keep well in the fridge for up to 5 days or can be frozen for up to 3 months.
