- Sear the chicken (optional, but worth it): Heat the olive oil in a large frying pan over medium-high heat. Sear the chicken thighs for 2–3 minutes per side until they're a deep golden brown. - Shred the chicken: Using two forks, remove the chicken thighs from the slow cooker and shred them directly in the pot or on a cutting board. You'll see the meat fall apart into juicy, stringy pieces — this is the moment the soup starts to feel complete. Return the shredded chicken to the broth.
- Cook the noodles: Stir in the egg noodles. Increase the slow cooker to high (if it isn't already) and cook for 20–30 minutes, or until the noodles are tender. You'll see them plump up and soften, and the broth will thicken slightly as the starch releases. Taste and adjust salt if needed.
- Finish and serve: Remove the bay leaves, stir in the fresh parsley, and ladle the soup into bowls. The final soup should be steaming hot, with tender chicken, al dente noodles, and colourful vegetables suspended in a fragrant, golden broth.
