- Brown the beef: Heat the olive oil in a large frying pan over medium-high heat. Add the minced beef and cook, breaking it apart with a wooden spoon, until it turns a deep brown colour and you hear a satisfying sizzle. This takes about 6-8 minutes. The kitchen will smell richly savoury. Drain off any excess fat, then add the diced onion and garlic. Cook for another 2-3 minutes until the onion softens and becomes translucent, and the garlic releases its fragrance.
- Season the mixture: Stir in the smoked paprika, dried thyme, salt, pepper, and Worcestershire sauce. Cook for one minute, allowing the spices to bloom and coat the beef. You'll notice the aroma becoming deeper and more complex.
- Prepare the creamy layer: In a medium bowl, whisk together the condensed soup and milk until smooth and silky, with no lumps remaining. The mixture should look pale and creamy, with a slight sheen.
- Layer the casserole: Lightly grease the inside of your slow cooker insert. Spread half of the frozen hash browns evenly across the bottom – they should form a solid, frosty layer. Spoon the seasoned beef mixture over the top, spreading it out so it covers the hash browns completely. Sprinkle half of the grated cheddar and mozzarella over the beef.
- Add remaining layers: Top with the rest of the frozen hash browns, creating another even layer. Pour the creamy soup mixture over everything, ensuring it seeps down through the layers. Use a spatula to gently press the top layer, helping the liquid distribute. Scatter the remaining cheese over the surface.
- Cook: Place the lid on the slow cooker and cook on high for 4 hours or on low for 6-7 hours. About 30 minutes before the end, remove the lid to let excess moisture evaporate – this helps the top become golden and slightly crispy. The casserole is ready when the edges are bubbling gently, the cheese is melted and golden in patches, and the hash browns are tender when pierced with a fork. The aroma will be incredibly inviting, with notes of melted cheese and savoury beef filling your kitchen.
- Rest and serve: Turn off the slow cooker and let the casserole sit for 10 minutes. This allows the layers to set slightly, making it easier to serve. Scoop out generous portions while it's still hot – you'll see the cheesy strands stretch beautifully as you lift each serving.
