Ingredients

  • 4 cod fillets about 150-180g each, skinless
  • 60 g fresh breadcrumbs from about 2 slices of day-old bread
  • 40 g finely grated Parmesan cheese
  • 2 tablespoons finely chopped fresh parsley
  • 1 teaspoon lemon zest from 1 lemon
  • 2 cloves garlic minced
  • 3 tablespoons melted unsalted butter
  • Salt and freshly ground black pepper to taste
  • 1 tablespoon olive oil for the baking dish
  • Lemon wedges for serving

Method

  1. Preheat and Prepare: Preheat your oven to 220°C (200°C fan) or 425°F. Lightly grease a baking dish large enough to hold the cod fillets in a single layer with the olive oil. Sensory cue: The oil will shimmer slightly as the dish warms up in the oven.
  2. Make the Crust: In a small bowl, combine the fresh breadcrumbs, grated Parmesan, chopped parsley, lemon zest, and minced garlic. Pour the melted butter over the mixture and stir with a fork until everything is evenly moistened and resembles coarse, damp sand. Sensory cue: The mixture should clump together slightly when pressed between your fingers, and you'll smell the fragrant garlic and lemon.
  3. Season the Cod: Pat the cod fillets dry with kitchen paper. This is a crucial step for a good sear and crust. Season both sides generously with salt and freshly ground black pepper. Sensory cue: The fish should feel dry to the touch, not slippery.
  4. Assemble the Dish: Place the seasoned cod fillets in the prepared baking dish, spacing them slightly apart. Divide the parmesan crust mixture evenly among the fillets, pressing it gently onto the top of each one to form a thick, even layer. Sensory cue: You'll feel the crust pressing down into a solid, cohesive topping.
  5. Bake the Cod: Place the dish on the middle rack of the preheated oven and bake for 12-15 minutes, depending on the thickness of your fillets. Sensory cue: The crust will turn a deep, golden brown and become firm to a gentle touch. The fish will be opaque and flake easily when tested with a fork. You may hear a slight sizzle from the butter.
  6. Rest and Serve: Remove the baking dish from the oven and let the cod rest for 2-3 minutes. This allows the juices to redistribute, ensuring the fish stays moist. Serve immediately with lemon wedges on the side for squeezing over the top.

Notes

Pat the cod dry thoroughly for best crust adhesion. Baking time may vary slightly depending on fillet thickness.
